We like heads of heirloom broccoli prepared in many different ways. We steam it and add a little butter. We steam it and serve with dill sauce or with a green sauce made with leeks. We make a cream of broccoli soup. We put it in casseroles with chicken. We grow the heirloom variety, green sprouting broccoli and freeze it for winter.
Here is a recipie for Broccoli Puff, made with eggs, cream and cheese.
1 head broccoli
1 small onion
1/2 cup heavy cream (raw preferred)
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
1/4 cup whole grain bread cubes
1/2 cup shredded sharp cheddar cheese
Set your oven to 350°.
Cut the broccoli and steam it until it is tender. This will be about 8 minutes. Allow it to cool somewhat. Put eggs, onions, and cream into the blender. Puree. Add the broccoli and puree again. Put the bread cubes, cheese, pepper, and nutmeg into a medium sized bowl. Add the puree and stir. Pour into an 8 inch square baking pan that has been buttered. Bake for 30-40 minutes. This will make 4-6 servings.
